Salmon poke bowl

1 cup sushi rice

Wash rice a in a bowl with water, until water is clear.

Add 1 ¼ cup water (not hot) boil the water, put a lid and cook until evaporation.

 

Add to the warm rice

Juice from ½ of a lemon or 2 TB spoons of rice wine vinegar

1 TB spoon of sugar

1 tea spoon of salt

Mix together and season to taste. Cover and set aside until ready to assemble the bowl.

 

Salmon

Marinade

2 TB spoon of rice wine vinegar

¼ cup soy sauce

¼ tea spoon of wasabi

1 tea spoon of syrup maple 

1 green onion, thinly sliced

1 TB spoon of sesame seeds

 

300 g Salmon cut to cubes (1cm*1 cm)

 

 

Mix all marinade components. season to taste.

Add salmon, cover and set aside for 10 minutes.

 

 

Optional toppings:

small sheets nori

cucumber

Avocado

Carrot

cabbage 

and more vegetables you like.
